    The King & I  Vineyards

    The Vineyards

    For the King and I, we use two vineyards namely Cabernet Sauvignon and Merlot. We use the top part of our Granietbult Cabernet block where the soils have more white granite crystals. This part of the Cabernet block gives more perfumed red fruit flavours to the wine.

    The other part of the King and I blend, is Merlot, which originates from the Verlatenkloof Vineyard, established in 1990. One third of this old bush vine vineyard has more gravel and clay soils, which bring a more powerful structure to the Merlot wine. This Merlot is then blended into the more perfumed Cabernet Sauvignon.

    Our Philosophy

    It is important to break out leaves quite severely around the Cabernet bunches. The idea is to maximize exposure to sunlight to ensure super ripe tannins. By the time the perfume flavours are ready, the tannins are perfectly ripe as well.

    For the Merlot, we also believe to remove some leaves to create very ripe tannins. Our belief is that the Merlot should be very ripe at picking to provide creaminess, earthiness and loads of super ripe tannins to the blend.
